Ingredients

Merlet Brothers Blend Cognac	40 ml – 2 oz
Merlet Crème de Pêche de Vigne, peach liqueur	10 ml – ½ oz
Freshly Squeezed Lemon Juice	25 ml – 1 ¼ oz
Simple Syrup	15 ml – ¾ oz
Egg White	25 ml -1 ¼ oz
White Wine	25 ml – 1 ¼ oz

Method

Combine Cognac, peach liqueur, lemon juice and egg white into a mixing glass and dry shake to pre whip ingredients. Add ice and shake vigourously for proper dilution and chill. Single strain into a chilled cocktail coupette. Top with white wine.
