Ingredients
| Merlet C² Citron, cognac & citruses liqueur | ½ oz - 10 ml |
| Rum | 2 oz - 40 ml |
| *Pineapple cordial | ¾ oz - 15 ml |
Method
Measure ingredients in a mixing tin over ice. Stir and fine strain into a coupette. *Pineapple Cordial : Fresh pineapple, 160 g of sugar, 2.8 g malic acid, 1.2 g tartaric acid. Peel and slice the pineapple, pour in the juicer. Centrifuge the pineapple juice and strain through superbag. Add sugar, maltic acid and tartaric acid. Store in a vacuum pac bag.
