Classic Champagne Cocktail

Appears in Jerry Thomas’ "How to Mix Drinks or the Bon Vivant’s Companion" (1862). There are several versions of this cocktail, but this one is the most common. The bitters-soaked sugar dissolves when the champagne is added, and the cocktail’s taste evolves while it is drunk..

Ingredients

Merlet Brothers Blend Cognac15 ml - 1 oz
Sugar cube1 pc
Angostura bitters3 drops
Champagne100 ml - 4 oz
* works with Merlet VSOP Cognac or Merlet VS Cognac

Method

Place a sugar cube on a napkin and add three drops of bitters. Put the bitter-soaked sugar in a champagne flute. Pour the cognac and fill glass with champagne. Squeeze an orange zest over the cocktail and discard.

Decoration : Orange zest (to discard)

Service : Champagne flute
