Ingredients
| Merlet C² Café, cognac & coffee liqueur | 25 ml - 1 oz |
| Expresso | 25 ml - 1 oz |
| Hot water at 80° | 50 ml - 2 oz |
| Pimento Cream* | 15 ml - float |
Method
Pour Merlet C² Café, expresso and hot water into a coffee glass. Gently add a float of pimento cream on the top. * Whipping Cream 400g, Sugar 120g, Ground Pimento (allspice) 4g. Infuse the Ground Pimento into the whipping cream, add the sugar and pour the mix into the siphon charged with one NO2 canister.
