The Seraphin is a version of the 1950’s drink EL Diablo which is Tony’s favourite Tequila drink. Tony swapped the black-currant for the pear to create a lighter style drink.
|Merlet Crème de Poire, pear liqueur||10 ml - ½ oz|
|White Tequila||50 ml – 2 oz|
|Freshly Squeezed Lime Juice||25 ml - 1 oz|
|Simple Syrup||15 ml - ½ oz|
|Ginger Beer||to top|
Pour all ingredients in tumbler glass filled with ice, top with ginger beer. Stir for few seconds.
Decoration : Lime Wedge
