The Seraphin is a version of the 1950’s drink EL Diablo which is Tony’s favourite Tequila drink. Tony swapped the black-currant for the pear to create a lighter style drink.

Ingredients

Merlet Crème de Poire, pear liqueur10 ml - ½ oz
White Tequila50 ml – 2 oz
Freshly Squeezed Lime Juice 25 ml - 1 oz
Simple Syrup 15 ml - ½ oz
Ginger Beerto top

Method

Pour all ingredients in tumbler glass filled with ice, top with ginger beer. Stir for few seconds.

Decoration : Lime Wedge
